A few days ago, I spotted a cup of commercial tiramisu while shopping. Tiramisu and crème brûlée are the two desserts I find almost impossible to resist.

I had just completed a five-day fast followed by 14 days of eating one meal a day. I felt grounded, clear, and my continuous glucose monitor showed a remarkably steady baseline. Still, that familiar voice crept in: It’s only one little cup. How much damage could it really do?

Then I remembered what happened the last time I tested these two desserts against my CGM.

The commercial tiramisu sent my glucose into a sharp, vertical spike—followed by a plunge so rapid that my low-glucose alarm started blaring. The crème brûlée, made simply with cream, egg yolks, and pure cane sugar, produced a far gentler curve and a smooth return to baseline.

I cannot point to the exact filler, refined starch, or industrial emulsifier responsible for that chaotic drop. But the biological contrast was enough.

I left the cup on the shelf.

Ingredients

The Foundation

The Cacao Espresso Chia Layer

  • Organic Whole Chia Seeds: 2 tbsp
  • Cold Fresh Espresso: 1 tbsp
  • Unsweetened Almond Milk (or Light Coconut Cream): 1/2 cup (120 ml)
  • Raw Organic Cacao Powder: 1 tsp

The Traditional Mascarpone Cream

  • Chilled Full-Fat Italian Mascarpone (or Organic Cream Cheese): 1/2 cup (115 g)
  • Organic Heavy Whipping Cream: 2 tbsp (30 ml)
  • Pure Vanilla Extract: 1/4 tsp
  • Liquid Monk Fruit or Stevia: 3–4 drops (adjusted to taste)

The Finish

Instructions

1. Form the Cacao Espresso Chia Layer

In a small bowl, whisk together the chia seeds, cold espresso, almond milk, raw cacao powder, and liquid sweetener for about 60 seconds. Let the mixture rest undisturbed for 10 minutes, whisk once more to disperse any clumps, then chill in the refrigerator until thickened.

2. Whip the Mascarpone Crown

In a separate bowl, combine the chilled mascarpone, heavy cream, vanilla extract, and sweetener. Whisk vigorously by hand or with a fork for 60 to 90 seconds until thick, silky, and spreadable.

3. Assemble & Chill

  • The Base: Cut the cooled Yez! Artisan Sponge Cake into rounds that fit snugly in the bottom of each glass cup.
  • The Espresso Soak: Slowly spoon cold espresso over the sponge, letting the open crumb absorb the liquid without oversaturating.
  • The Chia Layer: Divide the thickened cacao espresso chia cream evenly over the sponge bases.
  • The Crown: Spoon the whipped mascarpone cream over the chia layer, smoothing the top with the back of a spoon.
  • Dust & Cure: Dust lightly with raw cacao powder through a fine-mesh sieve. Cover and refrigerate for at least 2 to 3 hours (or overnight for optimal flavor integration). Keep refrigerated at or below 40°F (4°C).

Version 2: The Founder's Reserve Espresso Chia Cream Cup (Ultra-Rich Profile)

This is the richer, creamier variation—my personal favorite. Substituting half-and-half into the chia base softens the seeds into an almost undetectable custard, while folded cream cheese and whipped cream deliver an airy, luxurious topping with a hint of lemon brightness.

  • Curing Window/Chill Time: 8 hours (overnight) (essential for full texture fusion)

Instructions

1. Bloom the Chia in Hot Espresso

In a small bowl, combine the whole chia seeds and raw cacao powder. Pour the freshly brewed hot shot of espresso directly over them and stir thoroughly. Let rest for 5 to 10 minutes so the chia seeds drink in the concentrated espresso oils and swell.

2. Enrich the Chia Layer

Pour the half-and-half into the bloomed chia mixture and stir until uniform and creamy. Taste and add optional sweetener if desired (leaving it unsweetened creates the best dark espresso contrast).

3. Whip & Fold the Cream-Cheese Crown

  • Whip the Heavy Cream: In a chilled bowl, beat the cold heavy whipping cream with a hand mixer until soft peaks form. Set aside.
  • Cream the Cheese: In a separate bowl, beat the softened cream cheese, allulose, vanilla extract, and lemon zest on medium speed until silky smooth and completely lump-free.
  • Gently Fold: Add the whipped cream to the cream cheese base. Fold gently by hand with a silicone spatula, then finish on the lowest mixer speed for 5 to 10 seconds just until airy, light, and uniform. Do not overmix.

4. Assemble & Overnight Fusion

  • Layer the Base: Press a round of Yez! Artisan Sponge Cake into the base of each cup.
  • Layer the Cream: Spoon the espresso half-and-half chia blend generously over the cake.
  • Crown the Cups: Dollop the whipped cream-cheese topping generously over the chia layer.
  • Dust & Chill: Sift a fine dusting of raw cacao powder over the tops. Cover and refrigerate overnight.

Why the Overnight Rest is Non-Negotiable (Version 2)

The half-and-half fat matrix combined with an overnight chill allows the sponge cake to draw moisture from the chia layer. Over 8 to 12 hours, the chia seeds soften completely, merging into the cake base so the distinct seed texture disappears into a unified, silky bite. Short chilling (1–3 hours) leaves the seeds noticeably firm.

Dairy Safety & Storage

Because both versions contain active, unbaked, high-moisture dairy (mascarpone, cream cheese, and heavy cream), always store covered at 40°F (4°C) or colder. Do not leave at room temperature for more than 2 hours. Enjoy within 4 days.
