Ingredients

The Spiced Butter Base

  • Grass-Fed Butter: 80 g (approx. 5.5 tbsp), softened at room temperature
  • Granulated Allulose: 70 g
  • Large Egg Yolk: 1 cold (yolk only; provides richness while keeping the interior tender without turning into a spongy muffin)
  • Fresh Ginger Root: 26 g, peeled and finely grated on a microplane
  • Ground Cinnamon: 1 tsp
  • Ground Dry Ginger: 1.5 tsp
  • Ground Cloves: 1/4 tsp
  • Freshly Grated Nutmeg: 1/4 tsp

The Dry Base

  • Yez! Artisan Baking Mix: 100 g

Instructions

1. Cream the Butter and Sweetener

In a medium mixing bowl, beat the softened grass-fed butter and granulated allulose together using a hand mixer on medium speed for about 2 minutes until creamy, pale, and cohesive.

2. Blend the Aromatics & Binder

Add the single egg yolk, finely grated fresh ginger (along with any extracted ginger juice), dry ground ginger , cinnamon, cloves, and nutmeg. Beat on low speed just until the spices and ginger are evenly suspended throughout the butterfat.

3. Form the Dough

Pour in the 100 g Yez! Baking Mix. Switch to a stiff spatula and mix thoroughly until the flour hydrates and pulls together into a cohesive, soft dough ball.

4. Short Chill

Cover the bowl and place the dough in the refrigerator for 15 minutes. Chilling solidifies the butterfat slightly, making the dough easy to portion and preventing excessive spread in the oven.

5. Portion & Flatten

Preheat your oven to 325°F (160°C) convection (or 350°F standard). Line a flat baking sheet with parchment paper. Using a small cookie scoop or spoon, portion the dough into roughly 18 g balls (about 1 rounded tablespoon each) and place them 2 inches apart. Gently press each ball down with your palm or the flat bottom of a glass to about 1/4-inch thickness.

6. Bake to a Golden Set

Bake at 325°F (160°C) for 5 to 8 minutes, until the edges are deep golden-bronze and fine artisan crackles appear across the surface. The center will remain tender.

7. Pan Rest & Crucial 12-Hour Cure

Remove from the oven and leave the biscuits undisturbed on the hot baking sheet for 20 minutes to allow the delicate crumb matrix to stabilize before moving them to a wire rack.
