Artisan Single-Egg Sponge Cake Base
Light, airy, and versatile, this grain-free sponge cake base provides the foundation for layered artisan desserts. Formulated without grains, gluten, or starches, it creates an open, absorbent crumb that holds espresso, cream, and fruit compotes without collapsing or turning gummy. It is ideal for tiramisu cups, berry shortcakes, layered trifles, or sculpted mini tea cakes.

Instructions
1. Prep the Oven & Pan
Preheat your oven to 325°F (160°C) convection (or 350°F standard). Lightly grease your silicone mold, ramekin, or mini cake pan with grass-fed butter or line the base with parchment paper.
2. Whip the Egg and Sweetener
In a medium mixing bowl, combine the room-temperature egg and granulated allulose. Beat with an electric hand mixer on high speed for 3 to 4 minutes until the mixture turns pale, thick, foamy, and noticeably triples in volume. Mechanical aeration is essential here to give the grain-free crumb its lift and delicate structure.
3. Fold in the Mix
Sprinkle 15 g Yez! Artisan Baking Mix over the whipped egg. Using a silicone spatula, gently fold from the bottom up, cutting through the center to incorporate the dry flour without deflating the incorporated air bubbles.
4. The 10-Minute Hydration Rest
Let the batter rest undisturbed for 10 minutes. The cold-milled psyllium husk and organic coconut flour require this window to absorb the free water from the egg.
5. Check Consistency (15 g vs. 20 g Calibration)
After the rest, inspect the batter. It should be light, glossy, and spoonable—holding soft shape without feeling watery or dense.
- If the batter feels too loose or runny (often due to an extra-large egg white), gently fold in an additional 2 to 5 g of Yez! Artisan Baking Mix (up to 20 g total).
- Do not exceed 20 g, or the finished sponge will bake heavy instead of light and springy.
6. Pan & Bake
Gently spoon the batter into your prepared pan or mold, smoothing the surface without pressing down. Bake at 325°F (160°C) for 20 to 30 minutes, adjusting for depth:
- Thin layers or mini mold cavities: ~18–22 minutes.
- Deep single ramekins or mini cakes: ~25–30 minutes.
The sponge is done when the center is set, golden-bronze, and springs back gently when pressed with a fingertip.
7. Cool & Rest
Transfer to a wire cooling rack and allow the sponge to cool completely to room temperature before cutting, slicing, or unmolding. Grain-free bakes set their structural matrix as lipids and plant fibers cool.

Hydration Calibration: Why 15–20 Grams?
Fresh pasture-raised eggs naturally vary in liquid volume by several grams. Starting with 15 g ensures you never over-saturate the flour. Observing the batter after the 10-minute hydration window allows you to gauge whether the crumb requires that extra spoonful for structure or should remain light.
Sweetener Selection: Allulose vs. Erythritol
- Granulated Allulose (Recommended): Caramelizes gently, yielding a golden crust, moist crumb, and zero cooling aftertaste. Because allulose promotes browning, keep convection heat at 325°F so the center bakes through without over-darkening the surface.
- Erythritol: Will produce less surface color and bakes slightly drier with a mild cooling sensation on the palate. If using erythritol, judge doneness strictly by internal spring rather than surface color.
Layering & Soaking
For tiramisu or berry shortcakes, assemble the sponge with espresso, mascarpone cream, or fruit juices and refrigerate for at least 4 to 6 hours (or overnight). The sponge will evenly absorb the aromatics while retaining clean structural integrity.
