- Local Estate Tuscan Extra-Virgin Olive Oil: 1 tbsp (divided: half for brushing, half for finishing drizzle)
The Avocado Mash
- Ripe Hass Avocado: 1 large (or 1/2 per slice)
- Fresh Lime Juice (or Lemon Juice): 1 tsp
- Flaky Sea Salt (such as Maldon): Light pinch (adjust down to balance the salty feta)
- Freshly Cracked Black Pepper: To taste
The Artisan Toppings
- Authentic Sheep’s Milk Feta: 30 g (approx. 2 tbsp), coarsely crumbled

Instructions

2. Mash the Avocado & Feta Together
In a shallow bowl, combine the scooped avocado flesh, crumbled sheep's milk feta, fresh lime juice, and cracked black pepper.
Use a fork to mash the avocado and feta together. Press the feta curds into the avocado so the tangy brine infuses the natural fats, leaving small, creamy white pockets throughout the green mash rather than pureeing it completely flat.
