Instructions

1. Prep the Oven & Baking Sheet

Preheat your oven to 325°F (160°C) convection (or 350°F standard). Line a heavy-gauge baking sheet with unbleached parchment paper.

Oven Temperature Note:

While conventional wheat flour drop cookies often bake at 375°F, allulose is a natural monosaccharide that caramelizes much faster than sucrose. Keeping the oven calibrated at 325°F (160°C) ensures the butter and egg proteins set the interior crumb evenly before the edges over-caramelize.

2. Cream the Butter & Allulose

In a medium mixing bowl, beat the softened grass-fed butter and granulated allulose using an electric hand mixer on medium-high speed for 2 to 3 minutes until pale, light, and thoroughly emulsified.

3. Blend in Eggs & Aromatics

Add the room-temperature eggs one at a time, beating on low speed after each addition until smooth and fully incorporated. Blend in the vanilla extract, fresh lemon zest, and optional pure lemon extract until fragrant.

4. Incorporate the Mix & Rest

Add the 120 g Yez! Artisan Baking Mix to the bowl. Beat on low speed just until the flour is absorbed and a uniform, soft, scoopable dough forms. Let the dough rest for 3 to 5 minutes so the cold-milled seeds and coconut flour hydrate and tighten the dough.

5. Portion & Pan

Using a standard spring-loaded cookie scoop (or spoon), portion the dough into 12 rounded mounds (approx. 35–40 g each) and arrange them onto the prepared sheet, leaving about 2 inches of space between each cookie for gentle spreading. Lightly tap the top of each mound with damp fingers to create a soft, domed puck.

6. Bake to a Tender Set

Bake at 325°F (160°C) for 10 to 12 minutes, until the edges are lightly set and faint golden-bronze highlights appear underneath, while the centers remain distinctly soft and pale. Do not wait for the centers to firm up or darken—overbaking will dry out the delicate crumb.

7. Pan Rest (Crucial Step)

Remove the baking sheet from the oven and leave the cookies undisturbed directly on the warm pan for 15 to 20 minutes. Grain-free baked goods lack gluten bonds and set their lipid-fiber matrix gradually as they cool. Moving them while hot will cause them to break; once stabilized, transfer to a wire rack or serve.

Allulose vs. Erythritol Behavior

  • Granulated Allulose (Tested & Recommended): Allulose functions as a natural humectant, actively locking in moisture to maintain that pillowy, soft-baked center for days without recrystallizing or imparting a cooling sensation.
  • Erythritol Alternative: If baking with erythritol, reduce bake time slightly and lower expectations of browning. Erythritol tends to recrystallize as it cools, producing a crisper, firmer, and drier cookie with a noticeable cooling sensation on the tongue.

Storage & Freshness

  • Countertop Storage: Store cooled cookies in an airtight glass container at room temperature for up to 5 days. Because of allulose's moisture retention, they remain soft and tender.
