Instructions
1. Prep the Oven & Pan
Preheat your oven to 325°F (160°C) convection (or 350°F standard). Line a heavy-gauge baking sheet with unbleached parchment paper.
Bakery Calibration Note:
Because this batter contains 100 g of allulose alongside collagen peptides (which caramelize readily under heat), baking at 325°F (160°C) prevents premature surface browning while allowing the center to bake through to a soft, cakey set.
2. Emulsify the Batter Base
In a medium mixing bowl, combine the eggs, granulated allulose, collagen peptides, and optional vanilla extract. Using an electric hand mixer on medium speed, beat for 1 to 2 minutes until smooth, slightly pale, and completely lump-free.
3. Blend in the Mix & Hydrate
Pour in the 120 g Yez! Artisan Baking Mix. Beat on low speed just until fully combined into a thick, uniform, glossy batter. Let the batter rest for 3 to 5 minutes so the cold-milled seeds and coconut flour pre-hydrate and tighten into a spoonable mound.
4. Fold the Blueberries
Gently fold the fresh, dried blueberries into the batter by hand using a silicone spatula. Fold with a light touch from the bottom up to keep the berries intact without staining the batter.
5. Portion onto the Sheet
Using a large spring-loaded scoop (approx. 3 tablespoons per portion), scoop the batter into 8 to 10 rounded mounds on the prepared baking sheet, leaving about 2 inches of space between each top. With damp fingers or the back of a spoon, gently press down the peak of each mound into a wide, 3/4-inch-thick disc (muffin top shape).
6. Bake to a Tender Set

7. Pan Rest (Crucial Step)
Remove the sheet pan from the oven and leave the muffin tops undisturbed on the hot pan for at least 15 minutes. Once stabilized, transfer to a wire cooling rack.
