Almond Flour
What it is
Almond flour is made from finely ground almonds. It is naturally grain-free and gluten-free and provides a mild, slightly sweet nut flavor that works well in both sweet and savory baking.
Why we use it
Almond flour helps create a tender, satisfying crumb without the starches and gums often used in grain-based or highly processed gluten-free flours. It contributes healthy fats, some protein, and fiber, which help Yez! bakes feel more like real food than “diet bread.”
Nutrition and research
- Almonds are a natural source of vitamin E and several B vitamins, along with monounsaturated fats similar to those found in olive oil.
- Human studies have associated regular almond consumption with improved blood-lipid profiles and measures of vascular function.
- In people living with type 2 diabetes, eating almonds as part of an overall diet has been linked with better glycemic control and improved cholesterol and triglyceride levels.
